I awoke this morning with a craving for meatloaf. It’s not a dish I EVER think about but it’s one of Jim’s favorite diner foods.

I had to make it my own somehow. I started with the usual 85% lean ground beef, mixing 2 lbs of it with salt, pepper, dried Italian seasoning, steak seasoning, 1 tsp Worcestershire, 1/3 c 1/2&1/2, 3/4 c panko, 2 eggs, 2-3 cloves chopped garlic, 2 tbl ketchup, 1 medium yellow onion (sautéed), and fresh Italian parsley. After loosely forming it into a loaf; I topped it with a purée of 12 oz wild mushrooms, 2 tbl olive oil, salt, pepper, and garlic powder to taste.

I baked it at 350 degrees with just the mushroom top tented for 20 minutes, then I removed the foil for another 20 minutes.

While that baked I made the glaze of 3/4 c ketchup, two tbl honey, 1/4 cup red wine, 1 tsp white vinegar, 1 tsp smoked paprika. I spread the loaf with the glaze, sprinkled on more parsley for color, and baked another 20 minutes until it reached 160 degrees.

When we have the leftovers tomorrow, I will change up the sides (today I served it with an orzo pasta salad; tomorrow we will have mashed potatoes and a veggie) and I will make a simple gravy for the potatoes.

I get excited when the good bones of a space serve a purpose, like this closet.

The A/C was out this day, and Sweetgum Manor became SWEATgum Manor. But .s.y did not give up. The result was — and continues to be — fabulous!

Designing rings for this darling couple was an adventure! When I asked Jay why, after over 15 years together, he proposed marriage to Harriet, he looked at me with a serious face and said, “Because I love her.”
