Before you order anything, a plate shows up that you did not ask for.

Warm bread we baked this morning, and eight sauces around it. Our Shack sauces in Regular, Spiced and Habanero, then the house dressings: Quail Ranch, Honey Mustard, Habanero Island, Shack Island and Habanero Ranch.

It is not an appetiser and it is not on the bill. It is how we say hello, and it is the thing people end up writing reviews about.

Habanero is the one folks order on a dare and then ask for by name on the second visit.

Fifteen minutes. That is the supply chain.

The quail are in Joshua. The kitchen is in Cleburne. Eggs collected in the morning get cooked the same day, not stored for a fortnight and trucked through three warehouses first.

An egg does not go bad in a week. But it does change. The white loosens, the yolk flattens, and the thing that makes it taste like anything quietly leaves.

We raise them ourselves so we control exactly one thing: how fresh what you eat actually is.

The lights in the quail barn do two jobs.

Light length drives when birds lay, so the schedule inside that building is not decoration, it is the laying calendar. Set it wrong and production falls off a cliff.

Here is the second job. The same fixtures run a length of guttering planted with greens. Kale, lettuce, chard, onions, all growing off light that was already on for the birds.

One decision, two problems solved. Most of the ranch is built like that, and it is the reason a small operation can feed a restaurant at all.

We bake it here, in the same kitchen, because there was no version of it we could order. Same with the biscuits, the hoagie rolls and the pie crusts.

Scratch baking is a labour problem, not a recipe problem. Somebody has to be here early, every day we open, doing it again.

That somebody is us, and that is why the bread tastes like something.

Here is the part that actually shows up on the fork.

A quail egg has more yolk relative to white than a chicken egg does. More yolk means more fat and more emulsifier, and that is what makes a custard set silky instead of rubbery, and a sauce hold together instead of splitting.

It is why our custard tarts taste the way they do, and why the yolk on a burger reads richer than you expect from something that small.

Small egg, more of the good part.

Any meal on our menu can be made gluten free. Every one.

Now the honest part, because this matters to the people who need it. We are one kitchen. We can change what goes into your dish, and we do it all day. We cannot promise you a separate room.

So if it is a preference, you are covered easily. If it is celiac or a serious allergy, tell us when you order and we will tell you plainly what we can and cannot keep apart that day.

We would rather have that conversation than have you find out after.

Cracking a quail egg is not like cracking a chicken egg.

Tap it on the counter and you get a dent and a mess. The shell is thin but the membrane underneath is tough, so it fights you.

Two ways that actually work. Small scissors, snip the top off like a tiny boiled egg. Or a serrated knife, saw gently through the top third and pour.

Now you know what our kitchen is doing a few hundred times a week.
