The Von Trapp family has been in the Mad River Valley since 1959. As Molly explains, "you're working with this medium - milk - that's changing every day." which makes their commitment to each style even more impressive:
- Mt. Alice: bloomy rind, sweet and buttery, soft and approachable.
- Oma: washed rind, named for Sebastian von Trapp's grandmother Erika. Pungent and complex, browned butter and roasted nuts with a pudding-like consistency.
- Mad River Blue: named for the valley itself. Dense, fudgy, streaked with blue veining, notes of anise and cocoa against a savory undertone.
- Savage: semi-firm Alpine style, the newest of the four.
