Let’s talk about some incredible chefs who have been putting our mushrooms to GOOD use. 🍄💚
Meet Chef Kash and Chef Chris, the chefs behind Bando Verde, a sauce with a pretty cool story of its own.
“Bando” is short for abandoned, while “Verde” translates to green — representing a fresh start and new beginnings. 🌱
Chef Kash and Chef Chris met back in 2014 at Le Cordon Bleu and, after graduating, stepped away from the culinary scene for a while. Eventually, they found their way back to the kitchen, came together, and created something new: Bando Verde. This is more than a sauce… is a sweet/spicy crown when it comes to dressing up your dish.
For two years in a row, they’ve used Ellijay Mushrooms at AgLanta, the City of Atlanta initiative focused on urban agriculture, local food systems, and food security. And this year, our mushrooms made their way into one VERY delicious creation: Oyster Mushroom Empanadas! 🤤🍄
We’re not saying we’re biased… but those empanadas were a HIT. 👏
We love seeing our mushrooms travel from our little corner of Ellijay into kitchens, events, and plates all over Georgia. That’s the fun part — we grow them, and then we get to see what creative geniuses like Chef Kash and Chef Chris dream up with them.
And they’re not slowing down! 👀 They have a pop-up coming soon at La Bodega 1975 in Atlanta, with a tentative date of October 3rd, plus plans for a dinner club in the near future… to that we say save us a seat!
