Turkey. Cheddar. Green chile. On a gosh darn fresh, scratch made flakey croissant. This hunk of burning chile crispy yellow cheddar love has been on the menu for a few months and I thought ‘wow, I mean, it’s selling but not as popular as I expected it to be.’ Because it’s my favorite so it should automatically be your favorite, too. And, then I remembered a phrase today while I was making lemon cream and chocolate chip cookies at the same time that pretty well could have been a tagline of my sweet childhood: “I forgot.”

All of us are special, and my brain has this special feature where I think everyone I know has already met each other and I forget to make proper introductions, and I generally expect that everything I know everyone else already knows… like, if I know it it’s so obvious- pedestrian, you know? So why would we talk about it? There’s so much to talk talk talk about already! And you know I always have a million things to say.

So, you see, I assumed you’d see the green Chile cascading down the perfectly blistered tillamook cheddar which melted just so perfectly encasing (but not shrouding) a mound of shaved oven roasted turkey and think, ‘yep, that’s the breakfast for me!’ But I also forgot that the light at the end of the case first thing in the morning approximately 6ft 3inches from the register isn’t quite strong enough to illuminate this masterpiece piled up between ham and Swiss croissants and Monte Cristos, especially when you are on your way to work Friday morning and wondering will there be treats in the break room today or should you just get your own or, wait, should YOU get treats for the break room? and, alas…

So now I have remembered to tell you, and I’m sure there have been so many other pastries on the menu over the years which I forgot to tell you all about but one way or another, you find out and they find their way to you, just like these have and will continue to do. But now you *officially* know.

UPDATE: this Great Dane was taken to the Espanola Humane Society shelter. Please contact them if she is your dog or if you are interested in adopting her.

Wow! Being such a little operation I never would have expected someone or multiple someones to nominate Wilder as an Edible Local Hero.

I also know that most of the folks who come into Wilder don’t read foodie magazines, but let me tell you a quick story. When I was 23 and working in Petaluma in California wine country a beautiful stack of magazines were dropped off at the coffeeshop where I worked. The print quality, the photography, and the stories about folks who really were passionate and dedicated to their farms/restaurants, bakeries, beverage programs, and food producers were just everything I wanted to be. It was all things local, regenerative, and excellent. A celebration of natural food and food production. I turned to my fellow barista and said “when I open my shop, whenever that is, I’m going to be in Edible Magazine.” (There was a little mention back in 2020 ☺️)

At the time I didn’t know this magazine was pretty much in every state and then some (90 distinct publications under the umbrella of Edible). I was visiting New Mexico for the first time two years later and was treated to a beautiful dinner somewhere upstairs in Old Town ABQ and the restaurant had current copies of Edible New Mexico! I filed that away- good to know. Not just a California thing!

To be recognized as the kind of place that I dreamt of being for so many years before it was reality feels like enough, but I also see voting for this award as good for Chama which is why I’m sharing- letting the light shine a little further so more folks know we’re here and come through to experience the beauty of the area and see how we as a village are honoring the beauty of our surroundings through good work, good food, and good community.

Vote if you like. C4 also has a well deserved place on the ballot- they make such a big impact on the food system and they deserve our votes!
