Love this recipe. Had to share something sweet today!
Blueberry Lemon Swirl Cake Recipe 🍋🫐
Ingredients:
For the Cake:
2 1/2 cups all-purpose flour
1 1/2 cups granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup sour cream
3 large eggs
1 tablespoon lemon zest
1 tablespoon fresh lemon juice
1 teaspoon vanilla extract
For the Blueberry Sauce:
1 1/2 cups fresh blueberries (or frozen)
1/4 cup granulated sugar
1 tablespoon lemon juice
1 tablespoon cornstarch mixed with 1 tablespoon water (for thickening)
For the Glaze (Optional):
1/2 cup powdered sugar
1 tablespoon lemon juice
1-2 teaspoons milk
Instructions:
1. Prepare the cake batter:
Preheat the oven to 350°F (175°C).
Grease and flour a 9-inch round cake pan or line with parchment paper.
In a medium-sized bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
In a separate bowl, cream the softened butter and sugar together using a hand mixer or stand mixer until light and fluffy.
Beat in the eggs, one at a time, followed by vanilla extract, lemon zest, and lemon juice.
Gradually add the flour mixture in three additions, alternating with sour cream, starting and ending with the dry ingredients. Mix until just combined.
2. Make the blueberry swirl:
In a small saucepan, combine the blueberries, sugar, and lemon juice over medium heat. Cook until the blueberries break down and the mixture thickens, about 5-7 minutes.
Stir in the cornstarch mixture and cook for an additional minute, then remove from heat. Let it cool slightly.
3. Assemble the cake:
Pour half of the cake batter into the prepared pan.
Add spoonfuls of blueberry sauce on top, then swirl gently with a knife or toothpick.
Add the remaining cake batter, and then swirl more blueberry sauce on top, continuing to swirl for a marbled effect.
4. Bake:
Bake the cake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. If needed, cover the cake with foil halfway through the baking to prevent over-browning.
5. Make the glaze (optional):
Whisk together powdered sugar, lemon juice, and milk until smooth. Drizzle over the cooled cake.
6. Serve:
Once the cake has cooled, drizzle with the lemon glaze and garnish with fresh blueberries and a lemon slice if desired.
