Fancy cut doesn’t mean what most people think. In the diamond world, it describes anything that is not a round brilliant cut.
In coloured gemstones, that definition becomes less useful. Very few coloured stones are regularly cut as round brilliants (Do you know which ones are?)

So, by that logic, many of the most common coloured gemstone shapes (cushion, oval, emerald cut) would technically be fancy cuts.
That is why we hardly use the term in the same way.
When “fancy cut” is used in coloured gemstones, it usually refers to something more unusual: an artistic, individual, or less standard cut.
