Henry Fisher turns FIVE today!

Five years ago I fired up the still for the very first time with nothing but a dream, a shed, and the belief that great spirits bring great people together.
Today, we raise a glass to every moment since — the long nights, the early mornings, the numerous tastings, the mates who’ve supported Henry Fisher from day one, and the new faces who’ve joined the journey along the way.

What started as a small idea has grown into something I’m genuinely proud of: a distillery built on craft, community, and the simple joy of sharing a good drink.

To everyone who’s bought a bottle, visited a tasting session , told a friend, or shared a moment with me — thank you. You’re the reason I get to do what I love.

Here’s to five incredible years… and many more to come.

Yes two middle names.

People often ask me where the name Henry Fisher comes from. So here’s a little explanation. My Middle names are taken from the good looking rooster below
Sir James Hurtle Fisher he was my Great Great great Grandfather, maybe a few more or less greats I’m not sure…
Here’s a little history about him.

Sir James Hurtle Fisher (1790–1875) was an important figure in the early history of South Australia. He was the first Resident Commissioner of South Australia, a role in which he played a significant part in the planning and establishment of the colony. Fisher was also the first Mayor of Adelaide and a member of the South Australian Legislative Council. His contributions were crucial in the early development and governance of South Australia.
If you have ever been to Hurtle Square on the corner of Halifax and Pulteney st that was named after him… what a legend!

Hi all I’m thrilled to announce the launch of my second Single Cask Single Malt Whisky that has just taken out a Silver Medal at this years Tasting Australia. This is what the judges had to say about it.
“Really lovely dram, rich, caramel and creme brule notes.
Nose is super inviting and gives a really good picture of what the whisky offers.
Lovely balance of sweet and malt, stops short of being cloying.
Coats the mouth, unfolds gradually offering genuine depth.” Was absolutely stocked with these comments. Hopefully a gold next year with my upcoming releases.
