Normalizing the art of bread-making… because this is how I express myself. Maybe one day my kids will grow up to be “bread makers” too, just like they call me now.
Last night I threw together two big loaves at 75% hydration — my favorite. A quick proof, a closed lacey crumb, absolute perfection in my eyes.
Recipe below if you want to try it:
750g water • 100g whole wheat • 800g bread flour • 100g AP • 24g salt • 275g starter.
