Although they are now a symbol of French pastry, their story began in the 16th century when Catherine de’ Medici brought them from Italy to France. Over the centuries, French pastry chefs perfected them into the elegant treats we know today.
And here is a little secret…
There is no such thing as a freshly baked macaron.
After baking and filling, macarons need time to rest. During those few days, a delicate osmosis happens between the shells and the filling. The shells absorb the moisture and flavors, transforming into that signature soft, tender bite.
