Herb Baked Chicken Drumsticks with Mashed Potatoes & Carrots 🧄🍽️

Ingredients 📝
For the Chicken Drumsticks 🍗:
6 chicken drumsticks
2 tbsp olive oil 🫒
1 tbsp minced garlic 🧄
1 tsp onion powder 🧅
1 tsp paprika 🌶️
1 tsp dried parsley 🌿
½ tsp thyme 🌿
Salt & black pepper 🧂
For the Mashed Potatoes 🥔:
4 medium russet potatoes, peeled & cubed
½ cup warm milk 🥛
3 tbsp butter 🧈
½ tsp garlic powder 🧄
Salt & pepper 🧂
For the Carrots 🥕:
2 cups baby carrots
1 tbsp butter 🧈
1 tsp honey (optional for glaze) 🍯

Instructions 🍴
1️⃣ Bake the Chicken Drumsticks 🍗🔥
Preheat oven to 400°F (200°C).
Toss drumsticks in olive oil, garlic, onion powder, paprika, thyme, parsley, salt, and pepper.
Bake for 35–40 minutes until skin is golden and crispy ✨.
Tip: Let chicken rest 5 minutes before serving for juicier bites.
2️⃣ Butter the Carrots 🥕🧈
Steam or boil carrots until fork-tender.
Toss with butter, season with salt & pepper, and drizzle honey 🍯 if desired.
3️⃣ Make the Creamy Mash 🥔🥛
Boil potatoes until soft.
Mash with warm milk, butter, garlic powder, salt, and pepper until fluffy.
Optional: top with a small butter swirl for extra comfort vibes.
