One for the chefs and home cooks now that fresh truffle is here 🖤

Creamy Basque cheesecake infused with fresh Ohiwa Black Perigord truffle, finished with roasted pear, a drizzle of Manuka honey and delicate truffle shavings.

Here’s how:

🍐 Roast 2 sliced pears with a little butter until caramelised

🧀 Blend:

* 500g cream cheese
* 150ml cream
* 3 eggs
* 120g sugar

🍄 Infuse warm cream overnight with fresh shaved Ohiwa truffle before mixing

🔥 Bake at 220°C until deeply caramelised on top but still slightly wobbly in the centre

❄️ Chill before serving

Finish with roasted pear, Manuka honey and fresh truffle shavings.

Long before a fresh Black Périgord truffle is unearthed, the work begins beneath the soil. 🌱🖤

Every season at Ohiwa Black Diamonds is built on years of careful cultivation, inoculation, land management, and precision care throughout the truffière.

Young oak and hazelnut trees are inoculated with truffle spores at the very beginning of their journey, forming the delicate mycorrhizal relationship between tree roots and truffle that is essential for growth. From there, patience becomes part of the process.

The hunt for black truffle begins with expertise that isn’t human. 🖤🐾

As truffle season approaches here in New Zealand, our truffière prepares once again for the arrival of trained truffle dogs, whose sense of smell is powerful enough to detect ripe Black Périgord truffles hidden deep beneath the soil.

Historically, pigs were used to hunt truffles throughout Europe because they are naturally attracted to the aroma compounds found in truffles. But today, dogs have become the preferred choice around the world, including here at Ohiwa Black Diamonds.

Why?

Dogs are gentler on the truffière, easier to train and handle, less likely to damage delicate root systems, and unlike pigs… they’re far less likely to eat the truffle before you can get to it. ✨

A trained truffle dog works with precision, carefully identifying mature truffles at their peak aroma and quality, helping preserve both the land and the harvest itself.
